Turkey Night

Turkey burgers with goat cheese and spinach. That's right, goat cheese. This is a sneaky, and yummy, way to get spinach in your kids diet.

1 pound ground turkey meat
salt and pepper
1 tsp garlic powder
1/2 cup frozen spinach, thawed and squeezed dry
2 Tbsp crumbled goat cheese
Mix all ingredients and form 4-5 patties
Cook over medium heat for 5-6 minutes per side or until cooked through

Zucchini Fritters
5 Tbsp Bisquick
1/2 cup Parmesan cheese, grated
1/4 tsp salt
1/8 tsp pepper
2 eggs, beaten
2 Tbsp butter
2 cups zucchini, grated, pat dry
Blend first four ingredients, add eggs and mix well. Add zucchini to batter. Heat griddle or skillet and add butter. Pour batter into pan using 1/4 cup measuring cup. Fry 3 minutes on each side.
